The house
Great steak starts long before it reaches the grill.
We choose British beef for character, provenance and the way it eats — then dry-age selected cuts until the flavour is deep and the texture exactly right.
From there, we keep things direct: live charcoal, proper seasoning, patient resting and sauces made in our own kitchen. The room may be polished, but the pleasure is elemental.

We work with suppliers who can tell us where the beef came from, how it was raised and when it is eating at its best.
